I am shipping out to the tugboat tomorrow, which means I needed to cook whatever had in my fridge today.  I threw together some ground beef, bell-peppers, onions, and spinach then topped it off with guacamole for lunch.  It isn’t too difficult to cook healthy nor is it labor intensive.  It’s like the cooking show “Chopped”, take whatever is in the fridge and make something.
