Spaghetti Squash Carbonara


4 Slices of Bacon, cut into 1/2 inch pieces
Spaghetti Squash
1 egg, beaten
1/2 cup cream
1 Tbsp butter or ghee
salt and pepper to taste
  1. cut spaghetti squash lengthwise and roast face down in pan with 1 inch water for 40 mins @ 350 degrees.  After squash is cooked, take fork and shred out the inside into a bowl
  2. For carbonara sauce, in a saucepan combine egg, cream, and butter.  Cook over medium heat, do not boil.  Cook until sauce thickens, about 4 or 5 minutes
  3. place spaghetti squash in another sauce pan and spoon desired amount of sauce mixture over squash and add chopped bacon and warm contents of pan
  4. top with fried egg
  5. season with salt and pepper
