Crock-Pot Pork Belly

After two failed attempts at cooking pork belly, I needed to come up with a way to make it more tender.  My crock-pot was the answer!  I stole my crock-pot from sister so I might as well use it!   I cooked it in a bath of red-wine, garlic, crushed red pepper, salt and pepper.

Ingredients:

  • 3lbs of pork belly…rinsed and patted dry
  • 1 cup red wine
  • 4 cloves of minced garlis
  • 2T crushed red pepper, I use a portuguese style which is like this.
  • salt and pepper to taste

Directions:

  • cut pork belly into thirds – I did this so it was easier to handle as well as separating for different meals
  • place pork belly in crock pot
  • mix all other ingredients together and pour over pork belly
  • set crock-pot on low and cook for 6-8 hours
  • remove pork belly and cool to room temperature
  • place in fridge to cool
  • slice thin strips and pan-fry until crispy
  • ENJOY!
