Portuguese Chicken and Kale Soup

I took a classic Portuguese soup and turned it into a Paleo version.  The classic kale soup usually contains potatoes, beans, chourico(Portuguese sausage), and kale.  I omitted the potatoes and beans and added chicken, chourico, kale, carrots, celery, and onions.  Its a mix up of chicken soup and kale soup.  I cooked everything in a big crockpot and I will have soup for a week.


  1. 1 whole chicken(I used a store bought all natural rotisserie chicken, already cooked)
  2. 2 links chourico
  3. 4 cups kale
  4. 1 onion
  5. 4 carrots
  6. 2 stalks of celery
  7. 1 quart organic chicken stock
  8. salt, pepper, italian seasoning, red pepper to taste


  1. place cooked chicken in crockpot on high and cover with water to top of breast
  2. cook on high until chicken shreds apart, about an hour or so
  3. shred chicken-meat off of the bones, remove bones, set meat aside
  4. slice chourico into bite-sized pieces
  5. slice onion,carrots and celery
  6. break kale leaves into bit sized pieces
  7. put chicken, chourico and veggies into crockpot with broth left over from chicken
  8. you may need to add more chicken stock depending on how “brothy” you like it
  9. cook until vegetables are tender

Next time I might add in some sweet potatoes to thicken up the soup and add another layer of flavor.

    Mmmm I used to love getting kale soup during college (the town over was super Portuguese so they always made it!)
