Roasting vegetables brings out a whole new flavor profile. There is a nutty taste to broccoli and okra doesn’t get too slimy like other methods of cooking it. It also a time saver and super easy! I usually just coat in olive oil and season with whatever seasonings I have on hand. For this side-dish I chose chili powder, salt, pepper, cayenne. I roasted @400 Degrees F for about 20-25 mins. That is usually a good starting point for roasting veggie times!
