Compound Butter

Compound butter is basically butter mixed up with fresh herbs, spices or other seasonings and flavors.  I first used some compound butter on fish and was amazed! I now use compound butters under the skin of chickens and turkeys, it makes the breast unbelievably moist and flavorful, I mean who doesn’t love a moist and flavorful breast? It is quite possibly one of the easiest things to make.  All you need is room temperature butter and whatever herbs and spices you prefer.

If you are topping off fish or steak, I would roll the finished compound butter in log form in plastic wrap and place in the fridge to let the flavors settle.  When you take it out of the fridge you can slice it like a stick of butter and place on top of each piece of fish or steak.  As for putting it under the skin of chicken or turkey, place the room temperature compound mixture right under the skin.

For turkey and chicken I use parsley and butter:
