Stir-Fry Noodles

So last week I told you how much I love making noodles out of veggies, well here is an update with a chicken stir-fry.  I miss stir-fry with noodles, I used to make it a lot in the pre-Paleo days.  Now that I figured out I have a mandoline that makes the noodles be prepared for many veggie noodle posts!


  1. 2 small yellow squash
  2. 2 small zucchini
  3. 1 red bell pepper
  4. 1 onion
  5. 2 scallions – chopped
  6. 3 cloves garlic – chopped
  7. 2 Tbsp of ginger – grated
  8. 2 T ghee or coconut oil
  9. 2 T toasted sesame oil
  10. 2 T fish sauce
  11. 2 T Rice wine vinegar
  12. 4T coconut aminos or soy sauce(if you do some soy)
  13. salt and pepper to taste


  1. in a wok or skillet heat coconut oil or ghee and sesame oil, get pan smoking hot
  2. add garlic and ginger, cooking for 1 minute
  3. add all of the other veggies
  4. add coconut aminos, fish sauce, rice wine vinegar and salt and pepper and toss
  5. heat until just tender
  6. serve with chicken, pork, beef, shrimp
