Grilled Carrots and Goat Cheese

Want to spice up some boring carrots? Throw ’em on the fire!  In an effort to grill as many days as possible I am cooking everything on the grill!  This is so easy to do!  I know a lot of people don’t do dairy but I do.  Goat cheese is low in lactose and is so tangy and delicious.  Give it a try if you can handle dairy!

Ingredients:

  • carrots – peeled and coated in olive oil, salt and pepper
  • goat cheese
  • lemon zest

Directions:

  1. heat grill to high
  2. peel carrots and coat  in olive oil, salt and pepper
  3. cook until fork tender about 15 minutes, depending on thickness
  4. sprinkle with goat cheese
  5. zest a lemon over the whole plate
  6. enjoy!

  1. I actually really like goat cheese but don’t really do a lot of dairy. Might have to make an exception here… looks delish!!! (yes I should be working shhhh)
