Bacon Maple Bourbon Chicken

Honestly I don’t know if there is a finer combination of flavors on earth…bacon, maple and bourbon. I mean how can you go wrong?  I wish my middle name was Bacon-Maple-Bourbon.  You can just make the glaze and drink it out of the pan or put on some chicken drumsticks like myself and eat them!  It is an easy recipe to cook and the outcome is phenomenal.

You have some chicken, pork or even salmon and want to add a delicious, sweet, sticky, smoky glaze?  Use this glaze recipe.  Just imagine grilling chicken or pork chops for your friends and you add the bacon-maple-bourbon glaze right at the very end, they will be calling you Chef in no-time.  Making the glaze ahead of time is also a great idea, just heat it up before you want to brush it on your meats.  It will hold up well for a few days in the refrigerator in an air-tight container.

Whether you are cooking chicken in a skillet, pork chops on a grill or salmon on a cedar plank(that would be amazing) this glaze is yours.  Just remember to brush it on about 5 minutes before taking off of heat.  It will be just sticky enough and the sugars won’t have caramelized too much.  Just watch it very closely at the end you do not want the sugars to burn.  Pair this with a nice cold and refreshing salad or side-dish.

Ingredients for Chicken:

  • Chicken drumsticks or thighs (I only cooked 4 but I think it could handle up to 6)
  • 2 T olive oil
  • 2 T salt
  • 2 T pepper
  • 1 T chili powder
  • 1 T dried oregano

Ingredients for Maple Bourbon Bacon Glaze

  • 2 strips of bacon, cooked and chopped
  • 1/4 cup chicken broth or stock
  • 4 T maple syrup
  • 1 oz. bourbon or whiskey
  • 2 T dried oregano
  • 1 T salt
  • 1 T pepper

Directions:

  • preheat oven to 350º
  • combine chicken with olive oil, salt, pepper, chili powder, oregano
  • place chicken in baking dish or cast-iron skillet
  • cook for about 35-45 minutes until cooked thoroughly
  • in a shallow saute pan combine all of the ingredients for the maple- bourbon-bacon glaze
  • cook down about 5-8 minutes or until mixture becomes thick
  • remove chicken from oven and baste with maple-bourbon-bacon glaze
  • place chicken back in oven for 5 mins to let glaze reduce down on chicken some more
  • Enjoy, and don’t eat and drive with these! 😉
