Chicken Prosciutto Asparagus Roll-Ups

Ok so we all know I love to wrap my veggies in meat.  I will wrap almost anything in bacon, well who am I kidding?  I will wrap everything in bacon.  Prosciutto is also a good option to wrap veggies in.  It is especially good if you have a veggie that will cook fast, it gets so crispy and delicious.

I had picked up some small asparagus so I decided to take a few stalks and wrap them in prosciutto.  It is such an easy recipe to cook, bake at 350 for about ten minutes and you are done. I cooked up a batch the night before and decided I needed to do something different with the leftovers.  I figured wrapping a thinly sliced chicken breast around them would be an unusual way to use the leftover asparagus.


  • asparagus (thin stalks if possible)
  • prosciutto – about 1/8lb should work
  • chicken breasts – boneless, skinless, thinly sliced…amount varies on # of people eating
  • salt and pepper
  • olive oil
  • butchers twine or toothpicks

Directions :

  1. wrap 3-4 stalks of asparagus with one slice of prosciutto
  2. place on baking sheet and bake for 10-15 mins. until prosciutto is crispy
  3. lay chicken breasts on cutting board and season with salt and pepper to taste
  4. place one bunch of asparagus on one end of breast and roll-up as tight as possible
  5. tie with butchers twine or use a toothpick or skewer to hold together
  6. season outside of breasts with olive oil, salt and pepper
  7. grill chicken until done about 10 minutes, constantly turning so all sides are cooked
  8. if cooking in oven, cook for 10-15 minutes @ 400F, making sure temp reaches 165F
