Veggie Stacks

This veggie stack is an excellent side dish to dinner or even a great dinner idea itself.  I ate one for lunch and was sufficiently satisfied, the second stack I used in a frittata the next day..  It is so flavorful and filling with the meatiness of the portobello and the heartiness of eggplant. This is a great way to use up those fresh veggies from your garden or CSA boxes.

Ingredients:

  • 2 Portobello Mushrooms – stem removed and cleaned
  • 1 eggplant – sliced about 1/4″ thick
  • 1 tomato – sliced 1/4″ thick
  • 2 Tbsp goat cheese
  • olive oil, salt and pepper to taste

Directions:

  • heat grill to high
  • brush portobellos with olive and season with salt and pepper
  • grill portobellos until fork tender
  • brush eggplant with olive oil and season with salt and pepper
  • grill eggplant until fork tender
  • grill tomatoes until softened
  • assemble with portobello mushroom on bottom and layer eggplant and tomato slices
  • place 1Tbsp on each stack
