Leftover Grilled Veggie Frittatta

In my previous post I mentioned how I had leftover grilled veggies.  Well I was in the mood for a frittata so I figured I would chop all of the veggies up from my leftover stack, add bacon and eggs and there is breakfast made for the next few days.

Ingredients:

Directions:

  • preheat oven to 400F
  • cook slices of bacon in skillet
  • remove cooked bacon
  • add all veggies and sauté until warmed
  • beat eggs and pour directly into skillet over veggies
  • add bacon slices
  • bake for about 20-25 minutes or until top of frittata is golden brown
  • let cool for 5 minutes before slicing
