Portuguese Style Littleneck Clams

Littleneck clams are hands down my favorite seafood.  I eat them raw, steamed or cooked Portuguese style.  They are so delicious and relatively easy to cook with a cooking time of under 15 minutes you can have an amazing appetizer or meal.

Littlenecks are loaded with protein, with an estimated 22 grams of protein per 3 ounce serving.  They are also low in fat, high in potassium and loaded with vitamins and minerals.  According to SeafoodHealthFacts.org, they are one of the most sustainable seafood resources, thus making them a great choice to eat.

  • 2 lbs. littleneck clams – (rinsed and scrubbed with a brush to remove sand)
  • 1/2 cup white wine – (remember, only cook with wine you would drink)
  • 1/2 cup water
  • 1 link Portuguese sausage – (can substitute with chorizo, smoked sausage or bacon)
  • 2 Tbsp olive oil
  • 4 cloves garlic – chopped
  • 1 tsp. crushed red pepper
  • 1 tsp. black pepper
  • 1 scallion – chopped

  1. in a large pot, heat olive oil, and cook sausage until browned
  2. add garlic, crushed red pepper, black pepper and cook until garlic becomes fragrant
  3. add white wine, water, black pepper and bring to a boil
  4. once boiling, add littlenecks and cover pot
  5. cook until littlenecks start to open about 8-10 minutes( remember don’t eat littlenecks that haven’t opened)
  6. transfer to serving dish with sauce from the pot
  7. garnish with lemons and chopped scallion

Eat Well,

John Mack
