Skillet Tomato Chicken Thighs

Here it is again, a one skillet meal to satisfy all of your needs.  We all know I am a fan of chicken thighs.  Why you ask?  They are cheap and loaded with so much flavor compared to breasts.  Don’t get me wrong I love some breasts but I am a thigh-guy through and through.  With the chicken thigh you not only get deliciously moist chicken but you also get crispy skin if done right.  Thats why you need to sear the thigh skin-side down for a few minutes before placing in oven.  Also only add enough fire-roasted diced tomatoes just to reach the bottom of the skin, you don’t want to make that skin mushy.

Now say you have boneless-skinless chicken thighs or breasts on hand feel free to use this recipe.  Just make sure to cover the entire breast or boneless-skinless thigh with the tomatoes, otherwise they will dry out.  Hell, try it with those paper-thin pork chops that you see lying around the grocery store, there aren’t many other uses for that pork-paper.


  • 4 chicken thighs( bone-in)
  • 1 can fire-roasted diced tomatoes
  • 1/2 bell pepper – sliced
  • 1/2 onion – sliced
  • 1/2 t paprika
  • 1/2 t dried thyme
  • 1/4 t cumin
  • 1/8t garlic powder
  • Salt and Pepper to taste
  • 2T cooking fat (either ghee, coconut oil or bacon fat)


  1. preheat oven to 400ºF
  2. heat cast iron skillet to high with choice of 2T of cooking fat (ghee, coconut oil or bacon fat)
  3. sprinkle salt and pepper liberally on skin side of chicken
  4. mix rest of spices together and rub on skinless side of chicken
  5. cook skin-side down for 3 minutes or until skin is getting crisp
  6. flip thighs
  7. empty can of tomatoes into pan and add onions and peppers
  8. place cast-iron skillet in oven
  9. cook for 30-35 minutes
