Skillet Roasted Salmon, Fennel and Tomatoes

Here is another one-skillet meal that can be thrown together in 10 minutes.  Minimal mess and massive flavor is an equation for happy eaters.  We all know the benefits of eating wild caught fresh Salmon so why not include it in your weekly repertoire of dinner ideas?  Roasted fennel and tomatoes are a match made in heaven.  The licorice flavor of fennel and the sweetness of the burst tomatoes along with the acidity of lemons bites through the fattiness of the salmon.  I promise you, you will love this dish.  The picture doesn’t do it justice.

Ingredients :

  • Salmon filet, about 4-6 oz.
  • 1/2 bulb fennel(sliced thin)
  • 1 cup grape tomatoes
  • 1 lemon, wedged
  • 1/4t oregano
  • 1/4 t paprika
  • 1/8 t cumin
  • Salt and Pepper to taste
  • 2 T Ghee

Directions:

  1. preheat oven to 400ºF
  2. place skillet on stovetop on high with 2T ghee
  3. heat until almost smoking
  4. add salmon, skin side down
  5. place fennel, tomatoes and lemons around salmon filet
  6. bake for 12-15 minutes depending on thickness of filet
